More Baking - cupcakes and muffins

Two lavender cupcakes and a cup of coffee,
a perfect treat after an afternoon baking!
It was very, very hot during half term, but I still love to bake and managed some muffins and cupcakes one afternoon last week.

The Muffins are old family favourites, my sons would sometimes   bake them as a treat during  the weekend when they were teenagers.  As you can see they are full of really healthy ingredients!!!

Snickers and Peanut-Butter Muffins.  Doesn't the name tell you all!  You can find the recipe in "How to be a Domestic Goddess", by Nigella Lawson, page 218.

The Chocolate Cupcakes were from Vanessa's book, Prepped.   Vanessa uses her own lavender sugar, and I hope to make some in the summer as I have a couple of lovely lavender bushes in my Breton garden.  However this time I used the Cook's Ingredients  Lavender Sugar from Waitrose.  (I have just checked, if you haven't a Waitrose near you, it is available on line.)

Vanessa's recipe suggests a delicious sounding Lavender Cream, however, as the cakes were to last a few days, I decorated them with a simple Chocolate Glace Icing, using cocoa, icing sugar and warm water.  The cakes were very tasty, but perhaps had  a little too much lavender for children to enjoy, so next time I bake them I will probably use 1/2 lavender sugar, and 1/2 vanilla sugar.

  2. I just adore Nigella Lawson...in addition to her wonderful recipes..she is so beautiful...this is the second site I have looked at today and both have had cupcakes..hmmmm. Am I getting a message......I have all the ingredients ready for an Italian almond flour cake ...it has chocolate chips in it and almond slivers on top....Lydia Bastianich's recipe....looks heavenly...with lightly sweetened whipped cream on it......
