There was fresh fruit salad and a winter fruit compote with yoghurt, a huge selection of breakfast cereals and then a choice of a traditional cooked breakfast, kippers, smoked haddock and poached egg or smoked salmon.
I just loved the fruit compote and had some each morning. When I returned home I decided to try and recreate it. I looked for a similar recipe to the hotel's, both in my own cookery books and online, but couldn't find anything quite right, so this is what I made:-
Fruit Compote
Dried apple rings
Dried apricots
Dried Prunes
Cinnamon Sugar
Cinnamon
Cloves
Vanilla pod
I bought the fruit from Waitrose, the apples were more difficult to find in the other supermarkets I usually use. I used a whole packet of apples and about half a packet of the apricots and prunes.
I simmered the apples in a little water with two teaspoonfuls of sugar, the cinnamon, cloves and half a vanilla pod. I added the apricots and continued to cook for a few more minutes. Once I have turned off the pan, I added the prunes. (The first time I made it I added the prunes earlier, and they disintegrated, it was still tasty, but really didn't look very pleasant!)
This is super with low fat yoghurt or with fromage blanc, and as well as being a good breakfast, it is a useful snack to have in the fridge for those moments when hunger strikes!

how absolutely divine, I love the simplicity and fragrance of this easy and healthy breakfast... isn't it nice to have a lovely hotel breakfast where they quite clearly make an effort!

ReplyDeleteI am looking for a mid afternoon snack to keep me going and you may have just provided me with the solution. I adore dried fruit and can see myself eating this with yoghurt plus a few nuts & seeds sprinkled on top. Hope it will stop me reaching for the biscuit/chocolate option!x

Your right this looks perfect. Sometimes it just takes eating breakfast somewhere else to bring back things we have forgotten.

ReplyDeleteDelicious - it's so easy to get into a rut at breakfast time and eat the same thing day in day out - must try and get more organised to make some of this.
ReplyDeleteohhh this is a brilliant brilliant brilliant idea!! I really do love fruit compotes, because it's so useful, you can top porridge or yogurt or pudding or pancakes, but often, when i run out of fresh fruit, I just give up the idea altogether. never occured to me to use dried fruit!
