Rachel Khoo's Eggs in Pots (oeufs en cocotte)

I'm not a mad keen watcher of television, but every so often I find a lovely little programme which  inspires me.  Thus it was with Rachel Khoo's The Little Paris Kitchen. Her obvious love of and enthusiasm for French food is quite engaging,  so of course, Dear Reader,  I bought the book!

It's a really super read, with lots of interesting recipes, and is now in my house in Brittany.

I wanted to start with something simple, because I  think that apparently easy dishes can be far more challenging to get correct then seemingly more complex recipes.  So I decided to make Eggs in Pots, you can find the recipe in her book or on the BBC website here.

I have made them several times, the heart shaped egg is a more recent effort here in England.

This is a tasty meal, which would be ideal for a light lunch, or mid week supper.  I suppose if you felt very decedent it would make a fabulous weekend breakfast as well.

I bought the salmon caviar in France, where it is widely available in supermarkets.  It has a long shelf life, so is another item to add to the shopping list if you are in Europe and coming back by Channel ports!

When  I go to France in the summer I will do a post on things to bring home from France, there are so many lovely ingredients in the supermarkets  that are not widely available in England.

I warn you, if you make these eggs you're bound to  love them and they will become a "go to" recipe when you want something simple to cook and beautiful in both taste and look!

A super book

A few ingredients

I had no dill, so substituted chives, which work wonderfully

A simple meal to construct


A perfect supper 

And the salmon roe just adds that little extra special touch

I used fat free Fromage Frais and it worked as well as cream

I love the layering of fromage, herbs and eggs

The scrape of nutmeg is essential

Bake in a bain marie

PS I just love my new egg dish!

  2. I am the same as you & don't have a lot of spare time to watch TV. But, I made the effort to watch Rachel Khoo on Iplayer & think she is brilliant! Love her style and her super cool flat in a very trendy district of Paris. I had my eye in this recipe too, and simple is far more difficult than it sounds.
    Also, I have nominated you for a fun award on my latest blog post!

  3. The dish looks great ans sounds as it tastes good, too.
    Love the cover of that cook book. I am not sure if that is a French thing to make a simple dish like "scrambled egg with creme fraiche and herbs" look so great. But I am sure it is connected with the French lifestyle of meals are being important, to be there for enjoying them, not only to make you full as often is here with the Germans...

  4. Well there's another book on my list! I was not that impressed with the first programme, but I understand that the series has got better, and the book certainly looks fabulous! I have a very similar recipe that I cook for B and B guests when we have them, for a starter, and your wee oeufs en cocotte look LUSH ad I LOVE your new egg dish! :-) Karen

  6. Dianne at Yonks blog introduced me to Rachel Khoo, and I've been watching her on YouTube...love her, so charming. I plan on getting her book... it's on my Amazon wishlist;).

  7. I only managed to watch the last episode after a recommendation by a friend and loved it, thanks for sharing this egg recipe as at the moment I have a surplus from my belgian chickens!
    It's fantastic to find your blog, I too have two kitchens, one in Brussels, and one in Brittany!! and also split my cooking over the both. I'm so looking forward to following your blog as we both travel in the summer back to Brittany.....

  9. I loved the Rachel Khoo series and I have bought the book so will be trying this recipe. Not so keen on salmon roe but I would add fine strips of smoked salmon. Also keen to try the mini croque madame that she makes in a muffin tin. Yours do look delicious!

  11. Lovely egg dish. This series, author and book have passed me by until now, but with so many of you saying how good it is, I'd better look out for it. Never think to do eggs en cocotte, but it's such a nice simple dish - or so it would seem!
