Instant Jubilee Pudding - deconstructed Eton Mess

Last Sunday the sun was shining, and we cycled to our favourite French restaurant in Kingston.

We had  a super lunch , but our  little girl became fidgety and we decided that it might be better to go home for pudding.

When we got home,  I looked in the fridge and found:

Strawberries, Blueberries,  there was some homemade Ice-Cream in the freezer, plus some mini meringues in the cupboard.  

I put it all together (in about 2 minutes!)  and we ate the perfect Instant Jubilee Pudding: Red, White and Blue (and so simple to make!)
