Banana Cake! What could be better?
As you may be aware, banana cake is one of my all time favourites, I love trying new recipes and versions, so how could I resist the recipe leaflet I saw in Waitrose:
Banoffee Cake, with caramel, chocolate and banana?
Seriously, do you think you can resist this delightful cake?
The recipe is simplicity itself, the ingredient list is short and easy to resource, particularly if you have leftover bananas, and the cake, well it is heavenly! You can find a link to Waitrose

I substituted Bonne Maman Confiture de Caramel and regular chocolate chips, they both worked really well. The cake was moist and delicious, it kept for a two days, and may it have lasted longer, but of course I don't know for sure, as it had all been eaten up!

| All the wet ingredients |
 |
| To which I added the bananas and 3/4 of the chocolate |

| I folded in the flour and baking powder |
 |
| The mixture was placed in a lined loaf tin |
 |
| And the final 1/4 of chocolate drops sprinkled on top |
 |
As soon as it had cooled sufficiently, we just had to taste it - delicious. |
What a great looking cake. It never occurred to me to freeze bananas. I hate it when I end up throwing them out because despite best intentions, they didn't get eaten and I didn't have time to bake with them....from now on I will freeze them !! Thanks so much for the tip !!
ReplyDeleteAnd I love the confiture de caramel. I always keep some in the cupboard that we brought back from France, it's not easy to find here.

ReplyDeleteI picked up that leaflet, too - must dig it out as that looks delicious, though I'll probably leave out the chocolate drops. But I'm sure your little girl wouldn't agree!

This is too good, I daren't make it. Anything with that sort of caramel sauce in it is pure indulgence. Love it and the cake a lot! x

ReplyDeleteJude, thought you would like to know that I made this cake yesterday afternoon (using the Nestle Carnation Caramel as Tesco didn't have the Bonne Maman and I was too lazy to go to Waitrose) - we all loved it, ate it still warm - it was good cold later on as well. Definitely one to make again and again .......... and again ...............
