Normally I would be turning the pages of all my Nigella books and looking for a wonderfully gooey, chocolatey pudding or cake, but here I am in France with one book and it's all to do with summer cooking.
I have to confess right now, that I love eggs, and I adore omelettes, and have been known to eat a delectable piece of cold Spanish Omelette, when night starvation sneeks upon me.
So I thumbed through the book and what did I find, Corsican Omelette, how fantastic was that? It seemed ideal, light and summery, easy to source ingredients, and something that would be absolutely splendid for a midnight snack, should hunger strike!
The omelette was simplicity itself and you can find the recipe on Page 163, of Forever Summer, or on Nigella's website www.nigella.com, here.
I know Nazima at Working London Mummy is hosting next month's challenge, so I'm looking forward to that, and I should be back in Richmond with a few more books to choose from!

I adore a cold omelet. Worth making just to pop in the fridge for later!! Great idea and great entry. Think I may have to enter this month as I'm always raiding the fridge!
ReplyDeleteOh I too am an omelette fan. I have not considered having it as a cold meal though but maybe because there is none left to store!
