Corsican Omelette - Nigella, Fridge Raid Snacks

I love the way Karen (Lavender and Lovage)  comes up with such great ideas.  This month she is hosting Sarah ( MaisonCupcake) 's great  Forever Nigella monthly blog event, and she remembered those pictures of Nigella having a crafty mid-night snack from the fridge.  Karen has  challenged us to do the same, make something we'd like to eat later, you can find a link to the challenge Forever Nigella 18 Fridge Raid Snacks - In the Manner of Nigella, here and here.

Normally I would be turning the pages of all my Nigella books and looking for a wonderfully gooey, chocolatey pudding or cake, but here I am in France with one book and it's all to do with summer cooking.

I have to confess right now, that I love eggs, and I adore omelettes, and have been known to eat a delectable piece of cold Spanish Omelette, when  night starvation sneeks upon me.

So I thumbed through the book and what did I find, Corsican Omelette, how fantastic was that?  It seemed ideal, light and summery, easy to source ingredients, and something that would be absolutely splendid for a midnight snack, should hunger strike!

The omelette was simplicity itself and you can find the recipe on Page 163, of Forever Summer, or on Nigella's website www.nigella.com, here.

I know Nazima at Working London Mummy is hosting next month's challenge, so I'm looking forward to that, and I should be back in Richmond with a few more books to choose from!

Nigella enjoying the summer (forever)

How inspiring is that?
Please note Sarah and Karen, I have covered up the
ingredients list

However this maybe a slight giveaway (oops!)

The Corsican Omelette cooked in moments

Actually I might just eat it all straight away!
I did share it with my husband,
we ate it with a green salad

And a little piece left over for the fridge
(the dog didn't think that was a great idea, as he really
wanted to try it too)

  1. I adore a cold omelet. Worth making just to pop in the fridge for later!! Great idea and great entry. Think I may have to enter this month as I'm always raiding the fridge!

  2. Oh I too am an omelette fan. I have not considered having it as a cold meal though but maybe because there is none left to store!
